Bring water to a boil for rice noodles.
|
|
Remove bottom root from bok choy, then roughly chop.
|
|
Dice broccolini into 1-2 inch pieces.
|
|
Slice green onion.
|
|
Slice lime into wedges for garnish.
|
|
|
|
Add rice noodles to boiling water then cook 5-8 minutes, or until tender.
|
|
In a wok or large sauté pan, heat 1 tablespoon oil over medium heat.
|
|
Whisk eggs in a bowl, add to hot pan and cook 2-3 minutes, scrambling until cooked through; remove and set aside.
|
|
In the same pan, heat sesame oil over medium-high heat.
|
|
Add carrots and broccolini; cook 2 minutes.
|
|
Add bok choy; cook 2 minutes.
|
|
Add garlic; cook 1 minute until fragrant.
|
|
Add Pad See Ew sauce to vegetables; bring to a boil, then reduce heat to low and cook 3-6 minutes until slightly thickened.

Drain noodles, reserve some of the water.
|
|
Add noodles, 1-2 tablespoons reserved water and eggs to Pad See Ew sauce; toss to combine, adding more water as needed to coat noodles; season with salt and pepper to taste.

|
Scoop noodles and veggies onto a plate; garnish with green onion, sesame seeds and lime wedges.
