Heat @olive oil{5tbsp} in a large #saute pan{} on medium-high heat.
|
|
|
|
Add @garlic{2 cloves, minced} and fry for about ~{1 minute}, until it starts to carmelize, stirring a few times.
|
|
|
|
Add @cherry tomatoes{2lb} (careful so @oil{} doesn't spill out) along with @sugar{1/2 tsp}, @dried ancho chile{1, torn apart}, @salt{1/2 tsp} and @red pepper flakes{} to your spice preference (1-2tsp).
|
|
|
|
Pour in @water{1 cup} and stir for ~{4 minutes} until @tomatoes{} start to break down and it's bubbling.
|
|
|
|
Decrease the heat to medium-low and cook for an ~{hour}, stirring occasionally until @tomatoes{} and @chile{} have broken down and @sauce{} is thick.
|
|
|
|
Stir in the @basil leaves{1 cup} and set aside somewhere warm.
|
|
|
|
Cook the @fettuccine or spaghetti{14oz} in salted boiling @water{} for ~{10-12 minutes} until al dente.
|
|
|
|
Drain the @pasta{} and stir it into the @sauce{}.
|
|
|
|
Top with @parmesan cheese{1 1/4 oz, grated} when serving. |
